Mini Morning Apple Pancakes, Mini Morning Apple Pancakes, Mini Morning Apple Pancakes… Now, try reading that out loud three or more times, I swear it’s a tongue-twister to me – I’ve tried it and failed over and over again! What surely didn’t fail are the pancakes themselves, which I recently made on my favourite lazy Sunday mornings. Seriously, how amazing is it to sleep-in and get a heart-warming, delicious breakfast? It’s probably my favourite routine every weekend. With it being autumn, there are kilos and kilos of apples everywhere to buy for a nickle and a dime. I love it. Completely love it. There are about a million receipes to try out this season, and, quite frankly, it’s my favourite of the year (or do I say that about every season?).

I remember loving pancakes already as a kid. My mom would make them at least once a month, if not twice, for dinner. We would have the healthy pancakes first, filled with seasonal vegetables and sometimes meat, and were allowed to have one dessert pancake with cinnamon & sugar or nutella afterwards. I would always try to eat as many dessert-pancakes as possible, suddenly being super hungry again. Which reminds me, I should do that sometime soon again and share a recipe with you. What do you think?

This recipe makes around 8 mini-pancakes, so it is the perfect portion for two. Unless, of course, you are super hungry and want all for yourself. Naturally, you can also eat them when they cooled down some later hour and not share any. And, with it being no surprise, they are of course free of gluten and lactose.

What you need

2 eggs
200g glutenfree flour
50ml water
200ml milk
100g sugar (50g sugar and 1 tbs agave syrup also works)
1 pack vanilla-sugar
1 apple
coconut oil / or any oil of choice
powdered sugar (for decoration purposes if wanted)

What to do

1) separate the eggs and beat the egg whites until frothy (almost stiff)
2) add all other ingredients (excluding the egg yolk) into a bowl and mix it well
3) gently mix the beat egg whites under the mixture
4) cut the apple into slices
5) heat some coconut oil in a (small) pan and fill it with your pancake-mixture
6) prior to flipping the pancake, add a few slices of apple on top
7) flip the pancake and let it sit for another minute or two

Voila, now you can

1) serve it for you and your loved onces / or just yourself (no need to be ashamed!)
2) store them in the fridge for later
3) sprinkle them with powdered sugar (always looks great!) and serve them with some homemade jam – I had them with my apple-pumkin jam :-)
4) pack them in a lunch-bag for the kids to take to school – what a great snack!

Sunday-Walks in October

Hey everyone! I hope that you all had a wonderful day so far! I literally did not do anything really, haha. I had one of those super lazy sundays, which I absolutely love and cannot live without. I stayed in bed forever only to slowly get up at midday. The only thing I actually did was cleaning I guess haha, since I did clean, do the washing and made sure the apartment is pretty for the new week to start again. Other than that I went for a really beautiful walk today up into the hills and through the forests near my house. Autumn is probably my favorite season of the year – I love it when the leaves start changing their colors and soon everything will be orange and red. It’s astonishing, beautiful and breath-taking how nature can change into something so beautiful. Or I am just in a sentimental life phase haha. But really, I cannot get enough fo the sights! Sadly autumn is always super short, starts becoming cold and rainy way too fast and then everything will just become grey and dull in the winter months. Ah, so I am almost already looking forward to spring!

Now it’s time for some warm dinner, a hot shower and then I will most likely just sit infront of the TV tonight. The lazy sunday continues!

Power Breakfast & Vogue

Good morning everyone! I hope you had a fantastic week so far and a wonderful sunday to end it! Sundays are my lazy days: literally, I do nothing really other than read my magazines, play around with some photography (I really need to practice my skills), cook, sometimes bake, and read. Today I will most likely do exactly that, paired with some tanning in the sun – the weather in Zurich is great currently – and catching up with some friends over the phone in Germany.

To start my lazy sunday I love having power breakfasts. Power, because I actually take time to make them, try to have them rich on vitamins and minerals and of course it should be yummy. Today I chose scrambled egg whites with red peppers added previously, some red peppers raw on the side and a large glass of my green juice. The juice was way too much, I made about one litre, so I will just sip on that during the day as well.

My bible for the day: the Vogue. It’s a cliché, I know. It’s always amazing to get some inspiration out of it and read the articles. Otherwise, I love reading my InStyle, Harpers Bazaar, and some other magazines I find during the week. This year my mother actually gave me the Vogue as a present. I get it every month for free now – yes, I’m a lucky girl. Here’s to say: Thank you Mama!
