Linzertorte – Daddy’s Birthday Cake Recipe

Happy belated Birthday via this blog, dad!

Last week was my dads birthday. Since seemingly forever, one of his all-time favorite cakes is the so-called Linzertorte. My mom used to bake it for him every year at least once for his birthday; sometimes just in-between during the winter season. It’s also a traditional Christmas season cake in Germany. This year my dad was in Zurich for his birthday – mom joined, too. Because they arrived the night before his birthday, I decided to bake the cake a day before and surprised him in the morning with it and a lit candle.

Even though I am not the biggest fan of the cake, I must say it did go pretty well. The only thing I would note down for next time – the jam: it was too sweet for my taste. It really is important to find a good jam too add to the layer – or, make one yourself. Perhaps something I can do the next time around. For now, however, I wanted to share the recipe with you.

What you need

250 g soft butter / I used plant-based margarine
200 g brown sugar
2 medium-sized eggs
1 egg yolk
200 g grounded almonds
200 g flour
1 teaspoon cinnamon
knife tip of clove powder
250 g of your favorite jam (I used raspberry – the traditional receipe idea)
more flour
coconut oil 

What to do

1) In a large bowl, mix the butter with the eggs and sugar until nice and soft
2) add in the almonds, 200g of flour, cinnamon and clove powder – keep mixing
3) heat up the oven to 180°C 
4) spread coconut oil (best to use a cooking paintbrush) all over the baking tin (diameter around 26 cm)
5) add ⅔ of the dough into the tin, spread it equally and add jam on top of it (leave 2 cm free towards the edge)
6) add in more flour to the ⅓ of dough – so much, until you have a thicker cookie-dough like mixture
7) spread this dough onto transparent film, roughly 0.5 cm high – and place it min. 45min into the fridge
8) once fully cooled down, take out the dough and cut it into long strips, around 1cm wide
9) you’re ready to now place them onto the jam in any weaving-style you want
10) once done, whisk up the egg yolk and brush it onto the dough (this prevents the cake from burning and turning too dark)
11) now off into the oven – 40 min straight baking

E voila – there you have it! You’re (perhaps) first Linzertorte! Actually easier than it looks on the photo, I swear!

Chocolate Cravings Satisfied

You know this. Everyone probably knows this. I have such a sweet tooth – especially for chocolate. Not being able to eat regular chocolate all too much (lactose), I have to find other ways to satisfy my craving. Preferably somewhat healthy. I don’t always eat super healthy, hell, I drink every weekend and love my glass of wine. But given the chance and with some time, I always try to work out a somewhat healthy version of my cheat meals. So you might know this recipe already – I posted it here before. It is just so easy, so quick to make and so, so satisfying. Friends and family can’t get over the fact that it’s actually a healthy chocolate mousse. It’s unreal. So here it is again – satisfying my cravings on those cold winter days. Speaking off, it’s freezing at the moment. How did winter get here so fast? I am actually sitting here with a hot chocolate – preparing for the day at the office and getting everything ready. There is still so much to do before the weekend officially starts. Oh, and there’s plenty of stuff I need to work on coming up on the weekend. But I am more than looking forward to seeing my loved ones, sleeping in and spending some cozy, lazy hours in bed! Happy Sunday guys! I wanted to quickly update you all and especially thank you all again for the lovely wishes! Although my birthday was Thursday I’ve been receiving greetings, wishes, cards, lovely quotes, and so, so much love until today. Really, I appreciate every single comment and every little act and couldn’t be more thankful. Especially for the love my family and my besties give me – it’s what seriously keeps me alive. Being with whom I love.

Enough talking about love though. Thursday I worked, got surprised by presents and flowers at the office, had a lovely lunch with my colleagues, the most wonderful evening with my favorite people and got spoiled the whole day with presents. Speaking of – I finally got the iPhone 7 Plus! So, so happy with it. I’ve been wanting it for ages – the camera is just amazing. I’ve long been debating whether the plus version is too large. Honestly, I am still getting used to it a bit. But, being on my phone almost 24/7 and especially having that camera – makes the size so worth it. So thank you so, so much to my family! I also got some other presents, which I will share with you in the upcoming weeks. You might have already seen some or most on snapchat & my insta-stories.

Yesterday, one of my besties had her birthday. On that note, HAPPY BIRTHDAY! So many people I know have their birthday now in November (go scoripos!)- and the month only just started. What a month ahead! Parties, cake, parties , cake – oh, and votes! So my bestie and I decided to combine our birthdays in a birthday bash on Friday. What was planned to be a nice, rather quiet get-together in a bar ended up in an insane party. It was amazing! I am so thankful for everyone that came – you guys make my life.

Accordingly, my Saturday night was rather calm with a movie and staying in. Nothing wrong with spending some quality time. Today was similar. I’ve been as lazy as ever. Which is okay. Sometimes, it’s what you need. Tomorrow the routine starts again – I will be doing some workouts, go to the office, prepare more travels (probably another quick trip next week) and so many other things. I have SO much going on this upcoming week, I really need to focus on my tasks. Which is what I will be doing right now after this write-up – make a to-do list of what I need to do this week (on top of the other, usual business stuff). Sundays are for lovers? Sure they are. But they are also for staying in bed as long as possible, only getting up to go to the kitchen or the needed bathroom once in a while. My Sunday has been exactly that: I’ve not left the bed for most of the day today. I am used to getting up every day to sit at the computer one time or another to work on my studies, write a paper and prepare the week ahead. This and next week I finally have vacation though (from uni), before the next module starts. So I’ve decided to stay lazy most of the day, talk to my friends on the phone (which can take hours when catching up) and to look through my photos and get everything a little more organized on the digital side. This is a picture of mini me, discovering my joy for driving at a young age already – I looked so innocent! :’)

Now it’s time to do something though – I cannot lie around the whole day – its been enough, I’ve enjoyed it, but now I need to get active. I’ve decided to sort through some more papers today, then get back into my swimming routine. Tonight will most likely be lazy again, too – and plan ahead for tomorrow (so not super lazy). It’s a public holiday tomorrow but I want to get some personal projects going again and work on that – to be updated soon! What are your plans? xo
